“What’s Up Wednesday” is a post hosted by Sheaffer and Shay the last Wednesday of every month. It’s a fun opportunity to share a little bit about what’s going on with everybody lately. This is actually only my second time to join in. I really should try to do it more often.
What we’re eating this week
We had leftover take-out pizza Sunday night, and I finished it off for breakfast Monday morning. We were good Monday night, though, and had this much healthier yet delicious shrimp cobb salad:
What I’m reminiscing about
It was this time last year when my daughter Cara and her family had to leave Nigeria. It’s a COVID decision they don’t regret, but it sure did turn their world upside down overnight! Of course, the silver lining for me was that they came and lived in our addition for several months. I LOVED having them so close. And now that it’s springtime again, I’m reminded of a lot of the “at-home” activities Big Eagle and I enjoyed doing with them, since now we’re doing them again, but just the two of us.

SPRINGTIME, of course! It’s my favorite season!
What we’ve been up to
It’s that time of year! We’ve been spending a lot of time in the garden getting it ready and then getting things planted.
It may not look like much right now, but those are actually tomatoes in the foreground, onions on the right, radishes lettuce, spinach, beets, and green beans. Ignore that sign that says “okra”…that’s actually the spinach. Ha! In the background on the left is the watermelon. In the quadrant not pictured is sweet corn. Also not pictured is the asparagus.
What I’m dreading
We’re actually headed out of town, and I’m dreading all the weeds that will be encroaching on my vegetables when we get back. 😫
What I’m working on
Still working on getting the garden planted. I only have two rows of corn in, so I’ll be finishing getting the rest in next week. Also need to plant our bell peppers that are sitting in the garage. Then I’ll get started on the herb garden up near the house.
What I’m excited about
As I type this we are on our way to see these people!
I can’t wait to help the girls celebrate their birthdays! I’m still amazed that they were born on the same day, but 3 years apart!
What I’m watching/reading
I’ve really been enjoying the extra night of American Idol, since lately it’s been airing on both Sunday AND Monday nights! I loved watching Hollywood Week as well as the Showstopper episodes. Still loving Alanis Sophia, but with some of the powerhouse singers they have this season, I’m not sure she can all-out win. Would love to see her in the top 10 or 12 or whatever the number is to be this year. And next week we get to start voting! (…she said as she rubbed her hands together in anticipation)
Also Big Eagle and I have just recently finished watching all of the available episodes of Virgin River on Netflix. Although it’s rather Hallmarky, we liked it a lot. Now we’re trying to find another series to watch. Any suggestions?
I just finished reading Chicken Sisters. It was okay. I’m about to start The Tide Between Us.
What I’m listening to
May sound dorky, but I love listening to the different songbirds trilling away in the mornings this time of year! Also enjoyed listening to my fiddle music playlist last night.
What I’m wearing
Right now I’m wearing a pair of boot-cut jeans, a tie-dye top, and flats. I’m bringing all jeans and long sleeves on this trip, because it’s going to be a chilly few days.
What I’m doing this weekend
Hugging on the girls and helping Paul and Cara with whatever they need. Big Eagle and I will be staying in a hotel for the first time since COVID appeared in our lives, so that will be fun.
What I’m looking forward to next month
Since Big Eagle and I are now fully vaccinated, I’m looking forward to life getting at least somewhat back to normal! The first thing I did was see my hair stylist. That was only the second time in a year that I got my hair cut! I normally get it trimmed every 6 to 8 weeks.
Going into April one of the things I’m looking forward to getting back to doing is eating out at a restaurant. (Hear that, Pappadeaux?) It’s been nothing but home-cooked or take-out for a year, so we will enjoy dining in public again. I’d also like to attend a trivia night again with Big Eagle. We’re both looking forward to having friends over to our house again. And I will probably unfreeze my Orangetheory membership. It’s so much more fun working out in the studio than alone at home.
What else is new?
I haven’t mentioned in any of my posts that we had three trees on our property cut down in February. One was dying and had already dropped a pretty large limb, so it was too dangerous to keep. But the other two are the ones that I miss. They were just getting too big to be as close to the house as they were. One was outside the bedroom window of the addition. Now it’s just this stump:
The other one that really makes me sad was near the middle of our back yard. It now looks like this:
It had given us such wonderful shade for so many years. I hate to see it gone. I suppose one thing on the bright side is that maybe we’ll be able to grow some grass there again. There was so much shade that the grass had quit growing between the tree and our patio, and the yard there was nothing but dirt and a few weeds. Why is it that the weeds can ALWAYS grow? We’ll probably get the stumps ground out at some point. They sure aren’t very pretty to look at!
