Gosh, I haven’t done a blog post in forever! Decided a WUW post would be a good way to jump back in. However, since I didn’t finish putting it together until today, what I have here is a What’s Up Wednesday post on a Friday! Ah, well…such is life sometimes. Here’s how things have been around here lately.
What We’re Eating this Week
Breakfasts for me have been Greek yogurt with a handful of blueberries and a handful of granola mixed in.
Lunch has been tomato sandwiches on toast with mayo on repeat, since the garden tomatoes need to be eaten.
For dinner Monday night, I made sausage and potatoes. Hadn’t made it in a long time, and it was good. I used to make this one a lot when the kids were growing up. Now Danny makes it sometimes for him and Erin. He likes to use sweet potatoes in addition to regular potatoes. I will have to try that!
Tuesday night I made Mixandmatchmama’s Cilantro Lime Shrimp Pasta, and I’m sad to say it wasn’t that great. I think I used too much oil in the pesto. I also should have used larger shrimp and more of them. We still ate it, though, and I had the leftovers Wednesday night. I was glad to be able to use some of my flat-leaf parsley from my herb garden. This one does deserve another try sometime, and hopefully I’ll do a better job.
What I’m Reminiscing About
Two things:
First, while making that pesto dish, I was reminiscing about when my sister Susan visited at the end of April a couple of years ago. It was not the happiest of visits, because she had come to see our mom for the last time. But we did do a few fun things together while she was here, like making parsley pesto pasta.
It turned out really good! Maybe I should take a few pointers from Susan. 🤷♀️
And second, this is RAGBRAI week in Iowa. My friend Lynn and I did this week-long bike ride across Iowa two years ago. This year it went through her hometown, so she did two days of it. I kept a journal when we did it, and I’ve been reading through it this week. It was a fun experience!
What I’m Loving
I’m LOVING that my hairdresser Tifni is back in a salon! She had given up the station she was renting and was just doing hair either at her house or the client’s house. The last time I had her do my hair was at our house FOUR MONTHS ago! Recently I’d started looking pretty shaggy, but I wanted the salon experience again. It’s just not the same bending over a kitchen sink. So I was about ready to look for someone new, although I really didn’t want to, when she texted me that she was back at the salon. YAY! I went this past Tuesday, and she posted this collage of my hair on her Facebook business page afterwards. If I had known she was going to do that, I would’ve worn make-up. Ha!
What We’ve Been Up To
For a good part of July I was sick. Sicker than I’ve been in a long time. To the point I didn’t get out of bed and had no appetite for almost a week. Both the rapid and regular COVID tests came back negative. My doctor thinks I may have had RSV. Big Eagle got it from me, too, but his was not as severe. Still bad enough to make him feel crappy, though.
Now we’re both doing much better. We were in the market for some new area rugs, so last Saturday we went to Nebraska Furniture Mart in The Colony. Oh, my word! That place is A-M-A-Z-I-N-G! They have everything you could possibly want for your home and MORE! We did buy a new rug for our dining area, but after putting it down, we’ve decided it would be better in our bedroom.
I know it sounds crazy looking at this picture, but at the store I don’t think we realized how white white it is. So we’re going to switch out the rug in our bedroom with this new one. We love the rug…we just think it needs to go somewhere that gets less traffic.
What I’m Dreading
I know we’re all so sick of COVID, and now with the number of positive cases and hospitalizations on the rise, I’m dreading the possibility of those numbers continuing to climb. That’s all I’m going to say about it. Moving on…
What We’re Working On
Big Eagle has been painting the trim on the outside of the house. It’s a BIG job, especially in this Texas heat.
Another project has been pretty much on the back burner for over a year now. But with wanting to switch out the bedroom and dining room rugs, I have new motivation. So I’ve been emptying closets again and am working on emptying the last two bedrooms that need the popcorn ceiling removed. I’ve made a deadline for myself of the end of this coming weekend to have the rooms empty. I usually do better with a deadline. We’ll also roll up the new rug in the dining room and set it aside until the bedroom is finished and put the current bedroom rug down in the dining area instead.
What I’m Excited About
I suppose it’s a small thing, but our first watermelon is about ready to bring in from the garden. Can’t wait to slice it open and start eating ALL the COLD watermelon! Yum!
What I’m Watching/Reading
Big Eagle and I watched all of the new season of Virgin River. Now we’re watching McCartney 321 on Hulu. I’m really enjoying it…the music, interesting tidbits, etc. I think we only have two episodes left, though. I may watch it a second time.
My book club is reading The Book Woman of Troublesome Creek ahead of our August meeting, so I just started on that. I still need to publish my Book Talk post for May/June, so that should be up soon.
What I’m Listening To
All the George Strait music!
What I’m Wearing
Nothing exciting. Shorts, tank tops, t-shirts. Anything that’ll keep me from being too hot!
What I’m Doing This Weekend
Nothing in particular planned. Definitely finish emptying out the bedrooms. Probably clean up some in the garden. Maybe eat out Saturday night. Hoping to get rid of this lingering cough over the weekend. Ugh.
What I’m Looking Forward to Next Month
Girls trip to Vegas, baby! Yay! Going to see George Strait in concert! That’s why I’ve been listening to his music lately. 😉

I’m so sorry to hear that you and Alan have been so ill!! But glad to hear things are looking up. We’re in Alaska and having a joyful time! Enjoyed Raevyn’s birthday on Wednesday and now the Fair. We’re camped right on the water and it’s gorgeous. Headed home August 13 and celebrating our anniversary the 28th. Hope to see y’all before too long. Love ya.

I don’t even have an herb garden, so my pesto tip is Barilla makes a good one! Glad to hear you & Big Eagle are feeling better. Don’t go too hard on all those house chores, save your energy for Vegas! (That’s my plan anyway….:)

Glad your feeling better !! Eating the tomatoes the ones your brother makes here is putting butter outside of toast with may, salt, pepper tomatoes inside. That’s how he makes our ! I tell him you make them it to hard to me !! Lol. We getting so many and made spaghetti sauce few times. Doing stuff peppers once’s a week too. Love your table and rug. Yes I agree being an outside girl it’s hard to keep rugs clean. I even picked my up from the doors. Julie moved in her home now, first house she ever had so it’s a bittersweet for us !! I made roasted peppers in our grill and putting them on our sandwiches and last night Hamburgers !! Hope your watermelon is great ! I planted pumpkins and they are taking over garden but it’s ok. Garden is looking terrible !! I getting peppers and tomatoes and that’s all now. We had a dry hot summer.
Hope you feel better both of you. These coughs last for months for some reason. We are over this virus too I think the country is !! We knew 7 people lost their lives !! Praying for our country . Your hair looks great !!

I’m glad you are finally mending…I hope you are back to 100% soon. A summer of sleeping on the land and kayaking most days and hanging out with bears and whales has seen me get in the best shape in a few years. I hope I get to see you guys at the end of the month.

Catching up on blog posts. Sorry you were sick, but sounds like you bounced back. Nice to get the home projects done. I’ve bought furniture at the Nebraska Furniture Mart, in Omaha. Huge place. Love the rug, but later post show that you swapped rooms and I think that was a good call. Love the RAGBRAI pic. You go girl! Love Cuzin Tweety.
Thanks, Tweety! Hopefully, we’ll be ready to put the new rug down in the bedroom by the end of this week. It’s taking us forever to get everything painted! Lots of woodwork, and it all needs at least two coats, but we’re almost there. Once we finish the master, we need to start on the back bedroom.
