May 2021 Favorites!

One of these days I’m going to post my monthly favorites on the first of the following month, like I originally planned.  This is obviously not the day that is happening, though, since it’s already the middle of June.  But putting my shortcomings aside, May was a great month, and it just FLEW by!

Favorite #1

At the end of my April Favorites, I said I would be starting right back up where I left off, and that’s what I’m doing!  At that time, I was in Houston staying with my granddaughters while their parents were in Louisiana receiving their shipment of household items they’d had to leave behind in Nigeria the year before.

On Saturday May 1st, we decided to take a picnic lunch to the park.  To get to the park, we had to walk across this expressway overhead.

It always seems Sunny walks extra fast to get across the expressway.  I don’t blame her!  And I’m sure Helen will be glad to get to the park, so she can dispose of her baggage!

Both of the girls wanted me to take their picture while they were jumping off the swing.  Here ya’ go!

This girl is growing up so fast!  One day she was a little girl, and now she’s a preteen.

Oops!  Where’d Sunny go?  Ha!  No worries – on our way back home, once we started getting close to the house, the girls raced ahead of me.  Helen tucked Sunny safely inside before coming back to walk the rest of the way with me.

It had been looking like we’d be getting more rain.  That’s why we left the park.  But before the rain started, Edie was having some umbrella antics in front of the house.

 

Cara got back home on Monday, so I left on Tuesday.  On the way to my car I got a shot of Edie’s green bean plant.  She was so proud of it.  I think she had started it with her class at school, and then brought it home.  Here it is with the other plants by their front steps.

 

And here is a close-up, so you can see that she was successful at producing some green beans!

 

Favorite #2

While I was in Houston, on May 2nd, I got this picture in a text from Danny!

The text said, “Happy Lithuanian Mother’s Day!”  Evidently, in Lithuania they celebrate Mother’s Day a week earlier than here in the states.  The cherry blossoms are beautiful!

 

Favorite #3

The following weekend, Big Eagle and I made our first airline flight since before COVID entered the scene.  We flew AA to Florida to see his mom for Mother’s Day.  It was the first time we’d been with her since October of 2019, so it was a BIG favorite!

It may not have been the most comfortable thing having to wear masks the whole flight, but if that’s what it takes to get to fly again, we’ll do it!

We got there the Saturday before Mother’s Day.  That evening Big Eagle, his mom, his sister Wynne, and I joined Wynne’s daughter Kimberly, husband James, and son Devon for Mexican food.

 

The next morning we met my sister Nancy, her husband Buck, my nephew Austin, and my niece Rachelle for breakfast.

 

After breakfast, we drove to the cemetery to visit Mom’s gravesite.

 

This young man lives large, being chauffeured around in a car with his name inscribed on it!

 

That afternoon we went to Kimberly’s house, where she presented her mom and grandmother with Mother’s Day gifts.  I was so impressed with this bench they have on their patio for Pat!

Her grandkids (and pretty much everybody) call her Bonnie.  Hence, Bonnie’s Bench!  Very cool!

So on Monday night, we had fun breaking it in!  First I made zucchini fries for us to have as an appetizer.  Since I’ve never owned an air fryer, Wynne helped me operate it.

They were delicious!

Then for dinner, Wynne made fish in the air fryer for fish tacos.

Yum!  They were so good!  Nothing went to waste…that’s for sure!

Now I’ve been on the lookout for an air fryer for myself.  Right now I’m thinking it may be this one:

I like that it’s a toaster oven, too!

On Tuesday, Big Eagle and I went to my sister Susan’s house.  Her husband Rob was there, home for lunch.  My brother Tom also drove over from Deltona to see us.  Susan had told me she was going to ask him, but I was surprised that he made that drive!  So great to see the three of them!

When I asked Big Eagle to take a picture of Susan, Tom, and me, my brother went into his goofy mood.  Tom is always good at making us laugh!

 

So it took a few shots, but we finally got the next one, which was more like what I was after.

We headed back home the next morning, but it was such a fun trip!  It was so great seeing family members we’ve been missing for so long!

 

Favorite #4

Every spring we look forward to the fish fry fundraiser put on by our local volunteer fire department.  They didn’t have it last year due to you-know-what.  So I was happy the day that Big Eagle came home and said he saw a sign advertising it for this year.

So the Saturday night after we returned from Florida, we filled up on fried fish, cole slaw, and hush puppies!  Yum!

 

Favorite #5

Around mid-May, I saw on Facebook that a drive-by retirement send-off was planned for a former colleague.  My friend Lynn and I had both taught on the third-grade team that was organizing the event.  When I texted Lynn about it, she invited me to accompany her in her newly acquired T-bird.

Favorite #6

The following week we (Lynn and I) attended an end-of-the-year happy hour that a group of the teachers had on the last day of school.  Here you can see Jim, the happy new retiree, in the back on the right!

Another happy reunion with a dear group of people I’ve been missing the past year!

 

Favorite #7

One of my favorite breakfasts I enjoyed during the month of May:

 

Scrambled eggs with fresh spinach from the garden!  So good!  The spinach is done now, but I’m thinking to plant some more or just buy some to be able to keep eating this.  I know you’re LOVING my retro dish!  This is one of my Corelle dishes I still have from back in the seventies.

 

Favorite #8

On the last day of May we took off on our second flight since COVID to meet up with our son Danny in…YES!…the good old U. S. of A.!  We flew to Denver, CO, but I didn’t take any pictures that first day.  So…now you know how my June Favorites will begin!

 

I hope YOUR May had some happy memorable moments!  I’d love to hear about them, or anything else you feel like commenting.  And if you have any air fryer experience you’d like to share, I’d be interested in that, too!  You will notice that I’ve changed the commenting system that I use.  If you’ve found it frustrating before, you should find it MUCH easier now.  Why don’t you give it a whirl?  I hope to hear from you!

    I always enjoy reading your blog! Looks like you got some traveling in. I am hoping to start next month. First trip will be to NC for a 4th of July party. Then we have a wedding to go to (was postponed last year), and if all goes well, maybe even a trip to see my mom. I am so happy life is returning to normal for all of us!

      Thanks so much, Andrea! Good to hear from you! Yes, it’s so nice that things are beginning to get back to normal, and we can do more traveling. I hope y’all have a great trip to North Carolina! And maybe Germany? That would be so wonderful! We’d like to visit Danny and Erin in Lithuania whenever travel there opens up. Fingers crossed!

  2. What a delightful post. Your month was full of happiness. Great action shots of both girls parachuting from the swings and Edie with the umbrella. I am reminded of Mary Poppins. Love the photos of you and your siblings. Fun to see you guys cutting up and enjoying being together. I just bought a small air fryer and tried it out last night with Paul’s favorite…fish sticks. They were yummy.

      Yes, isn’t it nice to have a bit of return to normalcy? I saw on Facebook that you had a nice bike trip. It sounded awesome!
