Let’s Look at What I Eat in a Week!

Joining Erika and Shay today in their “Let’s Look” link-up!  “Let’s Look” happens every second Wednesday of the month, and I thought I would try to participate in as many of them as I could this year.  These posts are centered around a particular aspect of life as assigned by the hostesses.  Last month the topic was Let’s Look at How I Organize for the New Year.  Since I don’t really do anything special to organize for the new year, I didn’t participate in that one.  But I do eat!

Rather than “What I Eat in a Week”, since the food I eat any given week changes somewhat, this is “What I Ate During the Past Week”.  I wrote down everything I ate beginning last Wednesday morning and ending Tuesday night.

Breakfasts:

Two of the mornings I had a piece of toast spread with half of a smashed avocado topped with a sliced hard-boiled egg, salt, and pepper and a small glass of orange juice.

One morning I had scrambled eggs, grits, buttered toast, and orange juice.

Three mornings I had oatmeal.  I like my oatmeal with pecan pieces, diced apple, and milk added.  Water is what I drink, rather than orange juice, when I eat oatmeal.

I would say in the winter months, most of my breakfasts are oatmeal.

One morning I had a sliced hard-boiled egg with salt and pepper between two slices of buttered toast and orange juice.

I also drink two cups of coffee pretty much every morning – one when I first get up and one around mid-morning.

 

Lunches:

Four of my lunches were ham & swiss cheese sandwich, cottage cheese, and dill pickle spears.  One of those also had turkey on it in addition to the ham.  And one was a grilled ham and cheese.

I guess a sandwich is my typical lunch.  Which is one reason why I’m glad Pepperidge Farm has started making my favorite bread in a smaller, thinner slice than the one I used to buy.

Two of the week’s lunches were chili over spaghetti with grated cheddar cheese on top.

One day I had gumbo over rice with saltine crackers on the side.

I always drink water with my lunch.  And I always end my lunch with just a little bit of something sweet.  Lately it’s been these Merci chocolates:

My sister Susan picked up a package of these for our after-lunch sweet when she was here a few years ago, and they have remained a favorite of mine.  There are 16 candies in a box: two each of eight different flavors.  Just eating one after lunch makes a nice little dessert!

I ate the last one on Monday, so they were on my list to buy when I went shopping Monday afternoon.  HEB has an in-store coupon right now for $2 off per box, so I put TWO boxes in my cart. 😋 It’s the only time I’ve ever seen a deal on them!

 

Dinner:

Two nights I just had cheese & crackers for dinner.  I know that’s not much of a dinner, but one night I got home too late to fix anything.  The other night, I just wasn’t real hungry.

We knew serious winter weather was coming over night Wednesday into Thursday that was going to last a few days, so I made sure I had the ingredients for chili and for chicken and sausage gumbo… comfort food for cold nights!

Chili over half a baked potato with grated cheddar cheese on top was my dinner for two nights.

Three nights I had gumbo over rice.  Twice with crusty French bread, and once with saltine crackers.

That’s it!  What I ate in a week!  The chili and gumbo I made were obviously large amounts that provided us with many meals.  I’m one that is happy with leftovers!  The chili is gone now, but we’re still working on the gumbo.

    Sounds good. We make things also big pots of chili , gumbo , spaghetti . Sometimes share with Sara too. But this winter I made a lot of onions soup with my homemade bread ! Broccoli, cabbage , and cauliflower soup also. I pretty much use same recipe in all them. Cabbage I like using a tablespoon of tomato paste to little more color and it’s good !! Twice I made my basil tomato soup, with my freezer tomato’s. Soups mostly with my rosemary bread is our favorite for lunches .

    I love those merci chocolates! A German friend introduced us years ago – how clever, using them as an after-lunch snack. I didn’t know about that Pepperidge Farm bread – will be on the lookout now!
    I miss making lots of food for our family – with all the kids gone we hardly ever eat a meal together. We had family over twice last week and ate on those leftovers forever – I generally don’t mind leftovers 1-2 days but when they last longer I get bored.

      How nice that you have family nearby enough to have over for meals! All of our family are spread out. None of them live nearby. I envy you that!

    I usually eat yogurt with granola and fruit for breakfast but on a lazy Sunday morning I splurge and make poached eggs. I use a Sara Lee bread that is low in calories so I can have a couple slices toasted. When we had that cold front come through I made a big pot of chili. I think it’s even better the second and third day. Made nachos with it a couple nights. Yum!

      Nachos with chili sounds pretty good! I’ll have to find out how you do that. Yogurt with granola and fruit is pretty much my go-to breakfast in warm weather, but in these colder months, I like the warm oatmeal. So good to hear from you, Nancy! I should get in touch with you soon. It’s been too long!
